Nestor

Born and raised in Peru, in Trujillo, chef Nestor brings the warmth, colour, and soul of Latin American cooking straight to your plate. With roots in traditional Peruvian cuisine and a passion sparked in his family kitchen, (thanks abuela Sofia) he’s come a long way—cooking everywhere from busy cruise ships to many places in London.

At Kusikuy, he brings together top-quality ingredients, bold Peruvian flavours, and a big spoonful of joy. Every dish is made with care—and always with a bit of that Latin magic.

Carlos 

Born in La Palma, Canary Islands, Carlos is much more than an assistant chef—he’s a cornerstone of the Kusikuy family. A talented musician, rum and pisco lover, and passionate cook, Carlos brings rhythm, heart, and incredible flavour to our kitchen every single day.
From the very beginning, his dedication, intelligence, and quiet strength have been essential to this adventure. 
Whether he’s fine-tuning a dish or keeping the kitchen running with calm precision, Carlos is indispensable—resilient, creative, and always expanding his horizons through music and his deep love for Peruvian cuisine.

 

Sofía 
From Pavia, Italy  She’s helped shape the soul of the restaurant—designing our menus, building our website, keeping things running smoothly behind the scenes, and managing the front of house with care and energy. You might find her mixing up a Pisco Sour, talking you through the story behind a dish, or recommending a wine with genuine enthusiasm. Her love for llamas and all things Peruvian runs deep, and it shows in everything she does.
