Peruvian cuisine is a mosaic of cultures, landscapes, and unique flavors found nowhere else in the world. Each dish is born from ingredients deeply rooted in the land and history of Peru: from the coast’s abundant seafood, to the Andes with its ancestral potatoes and sacred grains like quinoa, all the way to the lush Amazon rainforest that offers exotic fruits, fish, and spices. In Kusikuy, we invite you to explore the local ingredients that make our food authentic, vibrant, and deeply connected to its origins.

MAIZ MORADO

Purple corn, or maíz morado, is a vibrant superfood native to the Andes and has been cultivated in Peru for centuries. Its deep, rich color isn't just visually striking; it’s packed with powerful antioxidants and cultural significance. One of the most beloved uses of purple corn is chicha morada, a traditional non-alcoholic drink made by boiling the corn with pineapple, cinnamon, cloves, and a touch of lime. Sweet, aromatic, and refreshing.

LOCAL FISH AND SEAFOOD

At Kusikuy, we believe that great food starts with great ingredients.
That's why we source our fish and seafood fresh each day from trusted local fisherman. By working directly with small-scale costal producers, we will ensure that every dish reflects the freshness of the sea while also supporting sustainable fishing practices and the local community.

This commitment is especially important when it comes to our signature ceviche; a dish where freshness is everything. Our ceviche is prepared in the traditional Peruvian style, with just-caught fish, zesty lime, red onions, and a touch of aji allowing the natural quality of the ingredients to shine through

OUR PISCO

Pisco is Peru’s national spirit—an aromatic, grape-based brandy. Distilled from carefully selected local grapes, pisco is the soul of two of the country’s most iconic cocktails: the Pisco Sour, with its perfect balance of lime, sugar, egg white, and bitters; and the Chilcano, a refreshing mix of pisco, ginger ale, and lime.

Our pisco comes from 1615, a renowned Peruvian brand that honors centuries of craftsmanship and heritage. Named after the year the first official records of pisco production appeared in Peru, 1615 pisco is crafted with precision and passion, using only the finest grapes grown in the fertile Ica Valley. Its purity and depth of flavor make it the perfect foundation for our Cocktails.

​OUR WINE

While Peru is world-famous for its pisco, its wine culture is quietly flourishing for its unique territory. At our restaurant, we proudly serve wines from Intipalka, a distinguished winery in the Ica Valley whose name means “Sun of the Valley” in Quechua. Grown in the desert climate where warm days and cool nights nurture the grapes, Intipalka wines reflect the unique terroir of Peru: elegant, balanced, and full of character.

Brewed in the historic city of Cusco, Cusqueña is Peru’s most iconic beer, crisp, refined, and rooted in Inca heritage. Made with pure Andean water and carefully selected malted barley, Cusqueña offers a smooth, balanced flavor that pairs beautifully with everything from street food to fine Andean cuisine. Whether it’s the classic golden lager, or the refreshing wheat beer, each variety reflects the quality of Peruvian brewing.
